Spiced Maple Pecan Praline Cheesecake

A rich, velvety cheesecake infused with pure maple syrup and crowned with a thick layer of buttery, toasted pecan pralines offers a sophisticated alternative to traditional holiday pies. The subtle warmth of the maple cuts through the rich cream cheese filling, while the caramelized crunch of the pecan topping delivers a wonderful textural contrast. Bake this dessert a day in advance to let it set thoroughly in the refrigerator, making it a stress-free option for busy holiday hosts who want to minimize day-of preparation.

Ingredients:

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup dark brown sugar, packed
  • 1/2 cup pure maple syrup (grade A or dark robust)
  • 4 large eggs, room temperature
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

For the Pecan Praline Topping:

  • 1 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1/3 cup heavy whipping cream
  • 2 cups raw pecan halves
  • 1 teaspoon vanilla extract
  • A pinch of flaky sea salt

Instructions:

  1. Preheat your oven to 325°F (165°C). Wrap the outside of a 9-inch springform pan securely with heavy-duty aluminum foil to prevent water leaks.
  2. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until the mixture resembles wet sand. Press the mixture firmly into the bottom and slightly up the sides of the prepared springform pan. Bake for 10 minutes, then remove and let cool.
  3. In a large bowl using an electric mixer, beat the softened cream cheese and dark brown sugar on medium speed until smooth and creamy.
  4. Pour in the pure maple syrup, vanilla extract, cinnamon, and nutmeg, mixing until fully incorporated.
  5. Add the eggs one at a time, beating on low speed just until combined after each addition. Do not overmix.
  6. Gently fold in the sour cream and all-purpose flour until smooth. Pour the batter over the cooled crust.
  7. Place the springform pan inside a large roasting pan. Fill the roasting pan with boiling water until it reaches about halfway up the sides of the springform pan.
  8. Bake for 60 to 75 minutes, or until the edges are set but the center still jiggles slightly. Turn off the oven, crack the door open, and let the cheesecake cool inside the oven for 1 hour. Chill in the refrigerator for at least 6 hours or overnight.
  9. To make the praline topping, melt the butter and brown sugar in a saucepan over medium heat. Stir in the heavy cream and bring to a gentle boil for 2 minutes. Add the pecans and cook for another 3 minutes. Remove from heat, stir in the vanilla extract and sea salt, then let cool slightly before pouring over the chilled cheesecake.

Rustic Spiced Apple and Pear Galette

For those who love fruit pastries but want a more relaxed, artisanal presentation than a standard double-crust pie, a rustic galette is an ideal choice. Thinly sliced Honeycrisp apples and crisp Bosc pears are tossed with brown sugar, lemon juice, and autumn spices, then wrapped in a flaky, buttery free-form pastry dough. As it bakes in the oven, the juices bubble up through the golden crust, creating an aromatic centerpiece that fills the entire kitchen with the scent of fall.

Ingredients:

For the Pastry Crust:

  • 1 1/4 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, very cold and cubed
  • 1/4 cup ice-cold water

For the Fruit Filling:

  • 2 large Honeycrisp apples, peeled, cored, and thinly sliced
  • 2 ripe Bosc pears, peeled, cored, and thinly sliced
  • 2 tablespoons freshly squeezed lemon juice
  • 1/3 cup light brown sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons unsalted butter, cut into small cubes

For Finishing:

  • 1 large egg beaten with 1 tablespoon water (for egg wash)
  • 1 tablespoon coarse turbinado sugar

Instructions:

  1. In a large bowl, whisk together the flour, granulated sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse meal with pea-sized butter bits.
  2. Drizzle in the ice-cold water one tablespoon at a time, mixing gently until the dough just comes together. Form into a disk, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.
  3. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  4. In a large bowl, toss the sliced apples and pears with lemon juice. Add the brown sugar, flour, cinnamon, and nutmeg, tossing gently until evenly coated.
  5. Roll the chilled dough out on a lightly floured surface into a rough 12-inch circle. Transfer the dough circle to the prepared baking sheet.
  6. Arrange the fruit mixture in the center of the dough, leaving a clear 2-inch border all around. Dot the top of the fruit with the small butter cubes.
  7. Fold the outer edges of the dough up and over the fruit, pleating the edges as you go to create a rustic crust border.
  8. Brush the exposed pastry dough with the egg wash and sprinkle generously with turbinado sugar.
  9. Bake for 35 to 45 minutes, or until the pastry is deep golden brown and the fruit filling is tender and bubbling. Let cool for 15 minutes before slicing.

  3. In a separate large bowl, beat the eggs and granulated sugar together with an electric mixer until thick and pale. Beat in the pumpkin puree.

  5. Bake for 12 to 15 minutes, or until the top springs back when touched.

  7. Prepare the filling by beating the cream cheese, butter, powdered sugar, and vanilla extract until smooth and fluffy.
  8. Unroll the cooled cake carefully, spread the filling evenly over the surface, and roll it back up without the towel.
  9. To make the caramel, heat the sugar and water in a saucepan over medium heat without stirring until it turns a deep amber color. Remove from heat, carefully stir in the warm heavy cream, butter, and sea salt. Drizzle over the roulade before serving.
